Here’s a pairing that might surprise you: blini with smoked salmon mousse and dill cream served with a cocktail of pomegranate juice, fresh mint, lavender and Voss sparkling water. That’s right, not vodka – water. The drink is one of five nonalcoholic cocktails created by Ted Kilgore (pictured here), master mixologist at Monarch Restaurant, for a multicourse dinner on Wednesday. Other highlights include chilled jasmine tea with honey and lemon served alongside poached prawns, napa cabbage slaw and honey-wasabi aioli, and a cocktail of white cranberry juice, pear nectar and muddled rosemary paired with rosemary roasted lamb chops, caramelized pears and greens with a lemon-oregano vinaigrette. And that’s just part of the $55 deal, which ends on a particularly luxurious note: chocolate empanadas, bing cherry syrup and bittersweet mousse served with hot frothed Mexican drinking chocolate.
