His Own Niche


If you thought it was hard getting a reservation at Niche before all the hubbub, you ain’t seen nothing yet. Before Food & Wine magazine named Niche’s owner-chef Gerard Craft as one of the 10 Best New Chefs in the country, savvy diners already knew that the 28-year-old and his staff at the quaint Benton Park restaurant lived up to the award’s purpose to recognize  “innovators with a distinct culinary style and vision creating exceptionally delicious food."

We already knew that Niche is the place for pork, whether the simple pork loin or the pappardelle pasta with smoked pulled pork shank, the very dish that the mag’s editor-in-chief supped on and even mentioned in the February 2008 issue.

We’re sure Craft is proud to be among such previous illustrious awardees as Daniel Boulud, Thomas Keller and Rick Bayless. But best to make your reservations now, because Craft and the other Best New Chefs will grace the cover of Food & Wine’s July issue.
